Tracy: Any tips for keeping venison jerky from becoming moldy? The last two batches I made went bad. The first time, I tried a tupperware container in the refrigerator. The next time I bought a food vacuum sealer and individually sealed the pieces - still grew mold.
Does this sound like a problem with the jerky-making process, how it's stored after it's made ... or both?
By the way, I'm using the store-bought cure, grinding the venison into hamburger and then using a jerky gun and dehydrator.
